Here are 3 diets that Americans face, that people, in general consider healthy. Obviously, if you are in the Keto camp, it would be a very different story. I am not making judgement calls but simply looking at who says what is good, less bad, and bad.

The First on on the list is the diet recommended by the American Heart Association. I would like to refer to this diet as the Standard American Diet (SAD). Then there is the Mediterranean Diet, which many people like following because it feels healthy. Then there is Dr. Esselstyn’s Heart Disease Reversal Diet or the Whole Food Plant Based diet on steroids because it asks to watch the intake of all types of oils including nuts, advocados and coconut.

“As nuts are a rich source of saturated fats, my preference is no nuts for heart disease patients. That also eliminates peanuts and peanut butter, even though peanuts are officially a legume. For those with established heart disease to add more saturated fat is inappropriate. For people with no heart disease who want to eat nuts, avocado, and coconut and are able to achieve a cholesterol of 150 and LDL of 80 or under without cholesterol lowering drugs, some nuts, avocado, and coconut are acceptable.”

Type ‘C8 Dupont’ on google, and you will learn about a carcinogen. Carcinogens are all around us. We are all exposed. If not by C8, then by other carcinogens.

Here is a study done on 118 rats. They were all exposed to another known carcinogen called Aflotoxin (AF). These rats were divided into two groups. First group were fed 20% of their diet with animal protein. Second group were fed 5% of their diet with animal protein. Both groups had same amount of total caloric intake.

Only difference was the amount of protein intake. (5% group were fed 15% more in carbs).

Rats generally live for 2 years. This was a 100 week study.

Group 1 saw all 58 rats die within the 100 weeks. The autopsy showed 3,321 tumors on these rats.

Group 2 saw all 60 rats still alive after the 100 weeks. The autopsy showed 248 tumors on these rats. All the rats were quite active at 100 weeks.

The animal protein was casein, which is a chief protein in milk and the essential ingredient of cheese. (Sorry if you love cheese.)

일반적인 식품 회사와 ‘푸드 테크 스타트업’의 다른 점은 무엇일까요?

이 질문은 요즘 저의 가장 중요한 고민 중 하나입니다.

혁신적인 제품? 제조 과정에서 사용하는 새로운 테크놀로지? 미래 식품환경에 대한 새롭고 감각적인 청사진?

모두 ‘스타트업’이 마땅히 해야 할 일입니다.

부끄럽지만, 저는 스타트업에 도전해서 몇 번의 실패를 겪었습니다.

수 없이 많은 작은 실패들과, 두 번의 결정적인 실패의 경험을 통해

저는 체계적인 시스템과 과학적인 접근법의 중요성을 다시금 배우고 있는 중입니다.

저는 우리 어스푸드 팀이 효과적으로 일할 수 있도록, 기존 테크 스타트업 필드에서 검증된 몇 가지 시스템을 적용해 보고 싶습니다.

그 시스템은 바로 OKR과 Lean Startup, 그리고 Business Model 입니다.

이 시스템들은 모두 책으로도 출판되어 있습니다.

1.OKR

OKR은 목적Objective과 핵심결과(Key Result)를 말합니다. 분명한 목적과 뚜렷한 핵심 결과는 조직에 건강한 긴장감을 주고, 팀워크를 실험해 볼 수 있는 플로우를 만들어 줄 것이라 생각합니다. 제가 생각하는 이번 분기의 목적과 핵심 결과는 다음과 같습니다.

목적 : 4월 6일 비건디너에서 업그레이드 된 어스밀크 MVP를 테이스팅한다.

핵심 결과 :

  • 기존 Pre-MVP에서 제기된 피드백을 반영한 업그레이드 된 어스밀크 MVP를 완성한다(제품)
  • 팀원들 사이에 형성된 식품환경에 대한 공감대를 더 많은 사람들과 공유할 수 있는 컨텐츠를 만든다(컨텐츠)

두 가지 핵심 결과에 몰두해 보려 합니다.

2. Lean Startup.

린 스타트업은 지속적인 혁신을 통해 고객의 니즈를 파악하고, 마켓핏(Market fit)을 찾아나가는 스타트업의 방법론입니다.

저희는 지금 EarthMilk라는 MVP를 통해 린 스타트업의 피드백 루프를 한 바퀴 돌고 있습니다.

이 과정을 가속화 할 수 있는 방법을 끊임없이 생각해 보아야 겠습니다.

 

3. Business Model

비즈니스 모델은 기업이 어떻게 이익을 창출하는지를 아홉가지 요소로 단순화한 모형입니다.

스위스의 비즈니스 이론가 알렉산더 오스터왈더는 전 세계의 비즈니스 관계자들과 일종의 오픈소스 프로젝트를 기획합니다.

그들은 모든 비즈니스에는 패턴이 있고, 그 패턴을 9가지 요소(Building Blocks)로 나누어 볼 수 있다고 주장했습니다.

그들이 만들어낸 비즈니스 모델 캔버스는 다음과 같습니다.

그들이 제시한 9가지 요소들(Building Blocks)을 다 함께 완성해 보는 워크샵은

우리 회사의 모든 구성원들이 우리 비즈니스에 대한 분명한 그림을 공유하는 데 있어서 매우 중요합니다.

이것은 너무 당연하지만, 많은 공동작업에서 쉽게 간과되는 사실이기도 하기에 이 과정에 신중을 기하는 것이 중요합니다.

오늘은 제가 우리 회사에 적용하고 싶은 세 가지 요소에 대해서 간략하게 설명해 보았습니다.

 

이 세 가지 이론들은 마치 지도와 같습니다.

분명히 그 길을 제시하고 있지만, 그 길을 걸어가는 것은 우리의 몫이겠지요.

저는 요즘 어스푸드를 만들어 가는 과정 속에서 ‘아는 것’ 보다 ‘할 수 있는 것’이 중요하다는 사실을 배워가고 있습니다.

What’s going to be the hottest vegan food trend in 2020? There’s a lot of deliciousness in store.

2019 was a big year for vegan food. We saw the rise of plant-based menu items in major restaurants including McDonald’s, Burger King, and KFC. Consumer appetites for vegan food seem to show no sign of slowing, either. And 2020 is poised to bring a whole lot more plants to a whole lot more plates. And in delicious and innovative ways. Here are our top 10 food trend predictions for 2020.

1. Biggest Meat Trend: Plant-Based Chicken 

If 2019 was the year of the vegan burger, 2020 is poised to be the year of vegan chicken. Whichever way you like it — fried, wings, or nugs —  the vegan chicken revolution is coming. Chains like KFC and A&W are already experimenting with vegan chicken but you can expect to see it everywhere else, too, soon enough. 2. Biggest Dairy Trend: Oats (Again)

Fact: anything meat or milk can do, oats can do just as good and even better. It was our top dairy trend for 2019 and it’s back for 2020. But this year, it’s more than just milk. While Oatly has already started the unstoppable infiltration into latte cups across the planet, oats are finding their way into a number of other items. Swedish brand Halsa is making a name for itself in the yogurt alternative market. And now with help from Stonyfield Yogurt founder Gary Hirshberg. And select Taco Bell locations are now serving meat made from Oats. That’s right, oat meat. It cooks and tastes just like traditional beef but without the consequences. 3. Biggest Fast-Food Trend: More Meat + Cheese!

While 2019 was certainly overflowing with vegan fast food options, 2020 is going to see even more inventive menu items and more restaurant chains jumping into the mix. Expect more burgers like Impossible or Beyond. Expect vegan chicken and sausages. But the biggest runaway fast-food hit in 2020 might just be vegan cheese. As chains saw significant success with vegan meat in 2019, consumers want fully vegan options like vegan cheeseburgers and vegan pizza. Chains like Domino’s and Pizza Hut have already been adding vegan cheese in the EU and Australia with much success. Could American shops be next? (Definitely.)

4. Biggest Trend To Watch: Vegan Egg

Scrambled, fried, quiche, even vegan versions of hard-boiled eggs will be on more plates in 2020 than ever before. And this isn’t just scrambled eggy-style tofu — brands like JUST and Follow Your Heart are revolutionizing the egg market with vegan alternatives that look, cook, and taste just like eggs. Tim Hortons has already been trialing vegan egg patties from JUST in select Canadian locations. And with chains like Dunkin’ launching vegan breakfast sausage, a vegan egg patty sandwich in the U.S. might not be that far off.

5. Biggest Vegan Buzz Category: Cheese

What’s more perfect than a wedge of stinky, creamy, pungent cheese? In 2020, the answer will be only this, I guarantee: vegan cheese, and lots of it. Get ready because the future will be meltable. While we’re certainly going to see more quick cheese options on burgers and pizzas, it’s just the tip of the giant wedge ahead. From small-batch producers making brie, cheddar, and gouda, to spreadable cream cheeses and crumbly feta and ricotta. Get those cheeseboards ready!

Sure, there are lots of vegan baked goods available already. But there will be more. And good things carbs are back in fashion because fresh crusty bread and croissants, brioche, those addictive macarons, and everything in between, is coming. You won’t have to go to specialty bakeries anymore. Vegan baked goods will be everywhere in 2020.

I took the Le Cordon Bleu cooking diploma course offered at the Sookmyung Womens University located in Seoul back in 2013. It was great, as I think they really taught me the basics to all cooking, although the cuisine we were being taught was French. And as you may know, a lot of French cooking involves extra virgin olive oil or butter, or in some cases both. That can be quite unhealthy for your blood vessels, so one of the first things I did when I became interested in this Whole Food Plant Based movement was to look up ways you can cook without using various fats, which is what oil and butter essentially is. In the 70’s and 80’s, a collaborative 20 year study between Cornell, Oxford and China’s Chinese Academy of Preventive Medicine was done. The laboratory was China. It was one of the most comprehensive studies done anywhere. This documentary talks of how comprehensive the study was, and finishes with some conclusions they subtly make. This 55 minute clip is not necessarily conclusive, but in can lay the foundation for a greater understanding of a Whole Food Plant Based diet. It does require patience to watch the whole clip as it can be a bit slow at times.
